Job duties
Island Town Foods Enterprises Ltd. is looking for a full-time Head Butcher – Wholesale and Meat Processing to support our meat cutting, wholesale order preparation, and in-house sausage production operations.
Main duties include:
Prepare standard and specialty cuts of lamb, goat, beef, poultry, and other meat products for wholesale, restaurant, and customer orders.
Cut, trim, bone, portion, wrap, weigh, package, label, and box fresh or frozen meat products according to order specifications.
Cut frozen lamb and other meat products for wholesale and large restaurant orders.
Grind meat and prepare meat inputs for in-house lamb and chicken sausage production.
Prepare sausage batches according to company recipes and standard operating procedures, including grinding, mixing, stuffing, portioning, packaging, labelling, and storage.
Use manual cutting tools, knives, band saws, grinders, mixers, stuffers, scales, and food-processing equipment safely and correctly.
Prepare wholesale meat pallets and packaged orders for storage, pickup, or delivery.
Maintain inventory records for frozen meat, meat products, packaging materials, and sausage production supplies.
Maintain production, batch, weight, temperature, packaging, and sanitation records as required.
Inspect meat and sausage products for quality, size, weight, packaging, labelling, and food-safety compliance.
Follow CFIA/SFCR, sanitation, temperature-control, workplace safety, and company food-safety procedures.
Clean and sanitize knives, cutting tables, machinery, tools, equipment, and immediate work areas.
Assist the owner or supervisor with training meat cutting, sausage production, and meat packing staff on company procedures, equipment safety, sanitation, and food-safety requirements.
Employment requirements
Completion of secondary school or approved equivalent is required.
Minimum 2 years of experience in butchery, meat cutting, meat processing, sausage preparation, or related meat production work is preferred.
Experience using knives, band saws, grinders, mixers, stuffers, scales, and food-processing equipment is an asset.
Basic English is required to follow safety instructions, production records, labels, and supervisor directions.
Must be able to work in a refrigerated/cold work environment.
Must be able to stand for extended periods and perform repetitive tasks.
Must be able to lift up to 50 lbs when required.
Knowledge of meat cuts, poultry, frozen meat handling, food safety, sanitation, and perishable product handling is required.
FoodSafe, HACCP, CFIA/SFCR, or other food-safety training is an asset.
