The Role
The Assistant Chef works alongside the Culinary Team Leader to manage the Terrace Kitchen, develop menu items, and support Terrace Front of House. In the off-season, when the Terrace is not open, this individual will fulfill the role of Tasting Room Team Leader as well as doing planning and development for the next season.
Duties & Responsibilities
Culinary
• Setting up the kitchen for success, as well as closing properly and efficiently
• Working with the Culinary Team Lead to develop and prepare menu items
• Working with the Culinary Team Lead to develop and prepare specials and event menus
• Delegating tasks to team members and ensuring that they are done to satisfaction
• Overseeing all staff in the kitchen, making sure everything is running smoothly
• Rotating stock using the FIFO principles and making sure everything is stored correctly
• Ordering and receiving stock as needed
• Preparing, producing, and presenting food items and ensuring the highest quality
• Maintaining a clean, sanitary, and safe workspace at all times to avoid contamination
• Ensuring proper equipment operation and maintenance procedures are observed
• Ensuring work assignments and daily tasks are completed
• Being aware of and following all kitchen health and safety regulations and guidelines
• Ensuring proper recycling procedures are adhered to
Terrace Restaurant
• Support all food and beverage service standards, food quality, and wine service
• Work closely with Terrace staff to ensure service runs smoothly from beginning to end
• Ensure food service operations on the Terrace are seamless and up to company standards
• Checking to make sure Terrace closing duties are done to standards
• Using the reservation platform to maintain reservations and predict business levels
Tasting Room (Off-Season)
• Assist the Tasting Room Manager in continuous training and development of new and existing staff to ensure best-in-class customer service and excellent employee satisfaction
• Open the tasting room and set it up for the day by doing leader opening duties
• Provide assistance on the floor to staff throughout the shift as a go-to person for troubleshooting issues that may arise
• Keep set standards for merchandise displays and the tasting room
• Assist with set up and take down of displays
• When overseeing the tasting room, you will work on the floor with the staff doing tastings or working the till while providing leadership and overseeing staff
• Maintain excellent relationships with existing tour companies and operators
• Record all wine samples used on a daily basis
• Closing the tasting room by doing daily close on the POS system and ensuring all closing duties are completed before leaving
Other Duties
• Maintain and build excellent relationships with catering partners and event partners
• Ensure all staff are following the uniform code and dressed appropriately for work
• Help manage labour based on business levels and trends
• Help plan and execute team-building events, contests, and more
• Event support as required
• Assist other departments as needed
Top Candidate Qualifications
• 2+ years of supervisory culinary experience
• BC Food Safe Level 1
• Ability to work well under pressure in a fast-paced environment while being detail and task-oriented
• You don’t need to be a bodybuilder, but you will need to be able to lift up to 24 kg
• Positive attitude. Because life is so much better with one
• Team player. Because work is so much easier if you are one
• Hard worker. Because the everyday is so much more meaningful when we do
• Willingness to work weekends and the occasional evening
Compensation and Other Details
• Hours: Full-time, permanent position
• Location: In-person at Monte Creek Winery
• Pay: $20 – $24/hr (wage dependent on candidate experience)
