The Opportunity
Ancora Waterfront Dining & Patio’s cuisine manifesto is hinged on sustainable seafood, while sourcing local and international ingredients, and draws inspiration from its Pacific Northwest surroundings. Understanding the city’s dining evolution has inspired Ancora to create a menu that accommodates all of its diners’ culinary desires, combining flavours and techniques which embrace several diverse cultures in a modern, yet approachable setting.
We are currently seeking an energetic, eager, and ambitious Chef de Cuisine to join our group of world-class chefs. The Chef de Cuisine will be responsible for leading, motivating and engaging with the culinary team to deliver the highest standard. You will be working to ensure that the vision is expressed through menu offerings and level of service as well as assisting in the hiring, training and expectations of your kitchen team.
What You’ll Do
– Provide exceptional dining experiences for our guests
– Lead, manage, supervise and motivate a large kitchen
– Monitor and control food cost and labour cost
– Conduct inventory counts and reports
– Create and write recipes
– Assist in planning and preparing menus
– Instruct chefs and cooks in preparation, cooking, garnishing and presentation of food
– Control food production to achieve maximum profitability
– Prepare and cook meals
– Monitor, control, and enforce cleaning of all kitchen areas
– Maintain communications and cooperation between back and front of house
What You Have:
• 2 to 3 years experience as a cook/chef
• Cook’s trade certification or equivalent credentials, training and/or experience

Salary: $57,000.00-$62,000.00 per year
